Carrot soup recipe
Carrot and Coriander soup is an easy and delicious meal that can be made in just a few minutes. This recipe uses carrots, celery, onion, and chicken stock to make a warm, comforting soup that’s perfect for a cold day.
Ingredients:
-1 lb of carrots (about 3 medium-size carrots)
-2 stalks of celery (about 1/2 lb)
-1 cup chopped onion (about 1 small onion)
-1 cup water
-2 tbsp butter or olive oil
Instructions:
1. Boil the water in a large pot over high heat until it comes to a boil. Add the carrots and cook for about 5 minutes or until they are slightly tender but not mushy.
Drain the water from the pot through a colander lined with cheesecloth over another large bowl; do not discard this liquid! Pour the broth back into the pot and add in all remaining ingredients except for butter or olive oil.
Simmer on very low heat for about 15 minutes or until vegetables are tender enough to eat without being mushy.
If you want your soup thicker than this point, add more flour or flour substitute gradually until desired consistency is reached (can also use milk instead of broth). Stir frequently while cooking
