Brown Rice Spaghetti with Garlic and Lemon
Ingredients:
– 8 ounces (about 225g) brown rice spagheti
– 3 tablespoons olive oil
– 4 cloves garlic, minced
– Zest of 1 lemon
– Juice of 1 lemon
– 1/4 teaspoon red pepper flakes (optional)
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
– Grated Parmesan cheese (optional, for serving)
Instructions:
1. Cook the brown rice spaghetti according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until the garlic is fragrant and just starting to turn golden brown.
3. Add the cooked brown rice spaghetti to the skillet. Toss gently to coat the pasta evenly with the garlic-infused olive oil.
4. Add the lemon zest and lemon juice to the skillet. Toss again to combine, ensuring the pasta is evenly coated with the lemony garlic sauce. If the pasta seems dry, add a splash of the reserved pasta cooking water to loosen it up.
5. Season the pasta with salt and pepper to taste. Toss well to combine and adjust the seasoning as needed.
6. Cook for an additional 1-2 minutes, allowing the flavors to meld together and the pasta to heat through.
7. Remove from heat and transfer the brown rice spaghetti to serving plates.
