Brown Rice Fusilli with Tomato Basil Sauce
Ingredients:
– 8 ounces (about 225g) brown rice pasta
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1 can (14 ounces) diced tomatoes
– 1/4 cup tomato paste
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– Fresh basil leaves, chopped (for garnish)
– Grated Parmesan cheese (optional, for serving)
Instructions:
1. Cook the brown rice pasta according to the package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
3. Add the diced tomatoes (with their juices) to the skillet, along with the tomato paste, dried oregano, and dried basil. Stir to combine.
4. Simmer the tomato sauce for about 10-15 minutes, stirring occasionally, until it thickens slightly and the flavours meld together. Season with salt and pepper to taste.
5. Once the sauce has thickened, add the cooked brown rice fusilli pasta to the skillet. Toss gently to coat the pasta evenly with the sauce.
6. Cook for an additional 2-3 minutes, allowing the pasta to absorb some of the sauce and heat through.
7. Remove from heat and garnish with freshly chopped basil leaves.
8. Serve the brown rice pasta with tomato basil sauce hot, optionally topped with grated Parmesan cheese for extra flavour.
