Cranberry & Blueberry Spread
Here’s a recipe for a homemade cranberry-blueberry spread:
Ingredients:
- 1 cup fresh or frozen cranberries
- 1 cup fresh or frozen blueberries
- 1/2 cup granulated sugar
- 1/4 cup orange juice
- 1/4 tsp grated orange zest
- 1/8 tsp ground cinnamon (optional)
Instructions:
- In a medium saucepan, combine the cranberries, blueberries, sugar, orange juice, orange zest, and cinnamon (if using).
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 15-20 minutes, or until the berries have burst and the mixture has thickened.
- Remove the pan from the heat and let the mixture cool for a few minutes.
- Use an immersion blender or transfer the mixture to a blender and puree until smooth.
- Pour the pureed mixture into sterilized jars, leaving about 1/4 inch of headspace.
- Wipe the rims of the jars with a clean, damp cloth, then place the lids and rings on the jars and screw them on tightly.
- Process the jars in a boiling water bath for 10 minutes.
- Remove the jars from the water and let them cool completely.
Your homemade cranberry-blueberry spread is now ready to enjoy! You can use it as a spread on toast, bagels, or scones, or as a topping for ice cream or yogurt. You can also use it as a glaze for meats or fish, or as a filling for cakes, cookies, or pastries. The spread will have a sweet and tangy flavour with a lovely texture.
