Pea and Mint Soup

Pea and mint soup recipe
Ingredients:
- 2 tablespoons of butter
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups of vegetable broth
- 6 cups of frozen peas
- 1/2 cup of fresh mint leaves, chopped
- 1/2 cup of heavy cream (optional)
- Salt and pepper to taste
- Optional toppings: croutons, fresh mint leaves, and a drizzle of olive oil
Instructions:
- Melt the butter in a large pot over medium heat. Add the onion and garlic and sauté for 5 minutes, or until the onion is translucent.
- Pour in the vegetable broth and bring the mixture to a boil.
- Add the frozen peas to the pot and cook for 3-4 minutes, or until the peas are tender.
- Remove the pot from the heat and use an immersion blender to blend the mixture until it is smooth.
- Stir in the chopped mint leaves and the heavy cream (if using). Season the soup with salt and pepper to taste.
- Serve the soup in bowls and top with any optional toppings of your choice.
